2015 Cabernet Sauvignon
The intense dark ruby red color of the Cabernet Sauvignon is reflective of this full-bodied, flavorful wine. The core of black currant and hints of cedar and spice along with cocoa aromas echoed by rich persistent flavors of plush ripe fruit, dark chocolate and anise are all supported by balanced rich velvety tannins.
Cabernet Sauvignon from Monahan Ranch, Bench, and Terrace vineyards (Estate) as well as Adelaida District. Petite Sirah the Monahan Ranch (Estate). Merlot from Adelaida and Creston Districts. Petit Verdot from the Creston District. Cabernet Franc from the Brady Vineyard.
This wine has the largest proportion of Estate fruit in our wine lineup. We crisscross the AVA to source grapes from warm sites with good exposure. This helps us create a juicy, full-bodied wine. Aged in French and Eastern European Oak for 18 months.

Pair with anything off the BBQ, steaks, braised short ribs, and lamp chops.
The 2015 vintage was another challenging season in Paso Robles. We began our spring with marginal moisture, the product of meager winter rains. This dry start was followed by above average warm temperatures into April, at which point we experienced an unusual cool down. This cooling lasted through May which gave us a tough start to the growing season. The volatile temperatures along with untimely winds resulted in poor flowering and fruit set, equalling a less than average crop. Temperatures remained moderate until an extended heat spike in early September, moderating back to normal temperatures to finish the season. Overall we experienced a vigorous early harvest season with good conditions for ripening.
