2016 Cavern Select Zinfandel
The 2016 Cavern Select Dusi Zinfandel is a medium to full bodied wine with aromas and flavors of white pepper, blackberries, baking spice, and dried herbs. The wines’ rich mouthfeel and balanced acidity followed by dusty tannins on the finish.
Our first year in Dusi’s Dante vineyard. The wine came from just 6 rows of the famed dry-farmed, head-trained vineyard on the west side of the 101 in the Templeton Gap district. The grapes were harvested early in the morning by hand and delivered to the winery in bins. It was the first red varietal to arrive at our winery Harvest 2016.
Fermented in one of our small tanks and completed malolactic fermentation in barrel. The wine was aged for 14 months in 100% new oak (75% European, 18% American, 7% French).
Zinfandel is one of the few varieties we like to pair with American oak. We feel the high vanilla qualities of American oak pairs well with Zinfandel.

The 2016 vintage began with below average rainfall as the Paso Robles area continues to be effected by drought. The dry start was followed by above average warm temperatures that lasted through June, at which point temperatures became more moderate. The early warm weather accelerated fruit development and allowed for an improved fruit set compared to the 2015 vintage. While harvest came early to many in Paso Robles, the mild temperatures extended our growing season improving overall grape quality. Temperatures remained seasonal until above average rainfall in late October concluded our harvest. Overall, we experienced a busy harvest season with prime conditions for ripening. The 2016 vintage has excellent depth of color and wonderful flavor maturity.
