Gold Medal - Central Coast Wine Compeitition 2018

With golden hues, this Chardonnay features flavors of spiced pear and caramel.  Aged and fermented in 100% French oak, this wine blends aromas of ripe honeycrisp apples and vanilla bean. The mid-palate reveals a rich creaminess with a bright acidity balance. The wine has medium body with a smooth, yet lingering toasted oak finish.

Tasting Notes
The 2016 Cavern Select Chardonnay has aromas of spiced apples and apricots. Medium bodied with flavors of pastry cream and toasted oak. This wine’s bright acidity is balanced by its’ rich and creamy finish. Serve with fresh shellfish, seafood pasta, and vegetable risotto. Released: December 2017 100% Chardonnay
Vineyard Notes
Adelaida District. Steep, rocky, southeast facing slope. We often have to do multiple hand picks in this vineyard due to challenges of the terrain. The top of the slope typically picks a couple weeks earlier than the bottom. This is because water drains faster at the top of the hill than the bottom, leaving less accessible water for the vines on top. With less water, this vine has to work harder to grow leaves and produce fruit, which means overall the vine is smaller than vines at the bottom of the hill. With less foliage, the rocks are better able to radiate heat up into the vine’s canopy causing the fruit to ripen faster than the vines at the bottom of the hill. This vineyard offers us the best of both worlds- big, ripe and concentrated on top and fresh, fruity and acid driven on the bottom.
Production Notes
100% French Oak barrel fermented. 65% new, 35% one year old. Aged sur lie for one year with periodic stirring.
Winemaker Notes
The introduction of new French Oak is a deviation from the 2015 Chardonnay. Our goal with the sur lie aging was to increase mouthfeel and balance the oak impression.

Serve with fresh shellfish, seafood pasta, and vegetable risotto.
