The 2016 Cavern Select Grenache is medium bodied with aromas of cranberries and ripe raspberries. Flavors of sweet herbs and Bing cherries round out the mid-palate. This wine’s soft tannins lends elegance to its long finish.
100% from the Adelaida District of the Paso Robles AVA.
The grapes were hand harvested into bins in late September 2016. The wine aged for 14 months in 100% French oak puncheons (50% new, 50% neutral.)
Grenache can be a tough varietal to make in Paso Robles. Warm weather can often be unforgiving on this thin-skinned varietal. We found a mountain top vineyard in the Adelaida AVA that we think has a lot of potential. We work closely with the vineyard manager to oversee vineyard practices we believe important to making a quality Grenache. Serve with roasted meats and vegetables, pastas, and cheese. Age for the next 3-5 years.
The 2016 vintage began with below average rainfall as the Paso Robles area continues to be effected by drought. The dry start was followed by above average warm temperatures that lasted through June, at which point temperatures became more moderate. The early warm weather accelerated fruit development and allowed for an improved fruit set compared to the 2015 vintage. While harvest came early to many in Paso Robles, the mild temperatures extended our growing season improving overall grape quality. Temperatures remained seasonal until above average rainfall in late October concluded our harvest. Overall, we experienced a busy harvest season with prime conditions for ripening. The 2016 vintage has excellent depth of color and wonderful flavor maturity.
