2016 Cavern Select GSM
Red Rhône Blend
The 2016 Cavern Select GSM has notes of black cherry, tarragon, and anise on the nose. Flavors of pepper, red plum, spiced orange peel, and chocolate on the full mid-palate with fine grained tannins with a smooth finish. Blend: 34% Grenache, 34% Syrah, 32% Mourvedre
48% from the Adelaida appellation, 32% from El Pomar appellation, 12% from the Creston appellation, 8% from the Santa Margarita Ranch appellation of the Paso Robles AVA.
The Grenache, Syrah, and Mourvèdre were brought in, fermented, pressed, and underwent malolactic fermentation in barrel individually. The Grenache aged in French Oak puncheons (50% new), the Syrah aged in French Oak barrels (100% new), and the Mourvèdre aged in European Oak barrels (2nd fill). In the spring of 2017, the wines were racked and blended to create the GSM blend and the wine was returned to French Oak puncheons (50% new) to age until bottling.
The GSM blend, in France called Côtes du Rhône (can include other varieties- 19 approved varieties for this area) is the origin of this style of blend. Rhône varietals have had a long history and do really well in Paso Robles. We decided to combine three of our favorite Rhône wines of vintage 2016 to make our Robert Hall interpretation of a true GSM. As we look back at the days of Pape de Robles, we sought to revive this club beloved blend with a few of the new vineyards we have begun to work with.
