The 2022 Cavern Select Vermentino has notes of citrus blossom and white nectarine on the nose. Lychee, pear, and papaya flavors on the mid-palate with a crisp, racy finish.
Winemaker Notes:
100% from the El Pomar appellation of the Paso Robles AVA. Grapes were picked in the cool early morning to preserve freshness, brought in, and pressed. With the free run, we filled a mix of concrete tanks and acacia wood barrels for fermentation. The wine then aged sur lie 6 months.
Varietal Notes:
Very little is planted in the United States, so working with the varietal is an exciting opportunity. Vermentino is largely planted in Italy (Sardina, Toscana, Liguria, Umbria) and France (Provence, Corsica, Languedoc-Roussillon). Though to be the same as the varietal Rolle in Provence and is believed to have come from the Malvasia genetic line. We made this wine in the Corsican/French style that we are inspired by (no malolactic fermentation).

Vintage Notes:
Vintage 2021 began with an encouraging mild start and lower than average rainfall. Bud break and bloom were a couple weeks later than average, setting the growing season back slightly. Temperatures rose significantly in August, shortening the seasonal delay. Heat waves plagued the season from August to October, with temperatures over 110°F for extended periods of time. Harvest began on August 17th, with white wines showing great quality despite the heat. At the end of one of the warmest vintages in Paso, we have found wine flavors and quality to be very good with excellent concentration.
