Our 2020 Cavern Select Syrah has notes of blackberry, sweet tobacco, and chocolate on the nose. Flavors of boysenberry preserves, black currant, and dried herbs fill out this round, full bodied wine. The wine has beautiful dusty tannins and a soft lingering finish. Serve with grilled venison, Spanish style tapas, tomato-based pasta dishes; Cheese: cheddar, asiago, epoisses.
The 2020 Cavern Select GSM has notes cherry preserves, tarragon, and anise on the nose. Flavors of kola, candied red plum, lavender on the full mid-palate with fine grained tannins with a smooth finish. Serve with grilled lamb or game, flatbreads with herbs and roasted tomatoes, cheese (gruyere, parmesan, epoisses).
The 2022 Cavern Select Rosé is bright pink in color with green mango, hibiscus, and stone on the nose. Flavors of blood orange and strawberry compliment the crisp acidity on the finish. Serve with tacos, seafood (halibut, shrimp), caprese salad, Cheese (chevre, ricotta, manchego, stilton).
